Curries in Thailand mainly differ from the curries in Indian cuisine in their use of ingredients such as herbs and aromatic leaves over a mix of spices.
What are the different types of Thai curry? There are three main types of Thai curries—red, yellow, and green—which are categorized by the color of the curry paste. The color of the chilies and other ingredients gives each curry its distinct hue.
Thai curry’s are usually made with Thai chilies which give them the extra spice but the coconut milk balances the flavor with its natural sweetness.
Usually Thai curries are meat based but even vegetarians can enjoy this delicacy with vegetarian options. In this Post, we will see how to make Vegan Red Thai curry.   • In a Pan take 2 tsp of Oil
  • Add cubed Onions and cubed Bell peppers. Saute Well.
  • Add diced Baby corns, Saute Well
  • Once they are almost cooked, Remove them aside.
  • In the same pan, Saute cubed Tofu with mixed herbs. Let it turn brown on both sides. Keep them aside.
  • In the pan, add 1 tsp oil and 3 tsp of Thai curry paste.
  • Add 200 ml of Coconut Milk , water if needed and salt to taste.
  • Add sauted veggies and let it boil for 5 mins.
  • Garnish it with Basil Leaves

Notes

Surprisingly, first time I had tried Thai curry in USA in 2011 in phoenix, From that day I was a big fan of this delicacy.
But luckily I got to explore my favorite cuisine in its local grounds when I visited Thailand in 2013. And to my surprise, This recipe was made in different ways at different cities of Thailand, In Phuket it was made with coconut milk and veggies whereas in Bangkok it was just vegetables with stock water and Thai spices.
