Mexican Rice Bowl – A Wholesome & Flavorful Meal! 🌯🍚✨

Chipotle Rice Bowl, It's a burrito bowl built with rice, beans, veggies and other ingredients and served in a deep bowl. Easy and yummy recipe. One of the best options for vegetarians. It can be customized at home with Just need some preparations. Lets see what all we will need for this: Rice: You can use either use white rice or a healthy version of brown rice, It is cooked with some herbs, lemon and cilantro. Cilantro Lime Rice is vegan and gluten free, easy to make rice recipe for rice bowls, burritos, etc., and is prepared in less than 20 minutes with basic ingredients from your kitchen. Beans: Here we can either use boiled Pinto beans or kidney beans whatever is available. Veggies: a combination of grilled onions, bell peppers and corn gives a flavorful taste. Add whatever you like. You can also add paneer pieces(indian version) Dips: Sour cream and Guacamole dips go best with this recipe.

Ingredients
    Making the Herbs Rice
  • 1 tbsp Olive oil/any oil
  • 1 cup Brown rice/white rice (soaked)
  • 2.5 cup Water
  • 1 tsp Mixed herbs (to taste)
  • 1 cup Cilantro (chopped)
  • 2 Bay leaves
  • 1 tsp Lemon juice
  • Saute Veggies
  • 1 onion (sliced)
  • 1 bell pepper(colored or green) (sliced)
  • 1 tsp mixed herbs
  • Beans
  • 1 cup kidney beans or pinto beans (boiled)
  • tsp mixed herbs
  • 1 tsp cumin powder
  • salt (to taste)
Instructions
    Herbs Brown Rice
  1. Add 1 Tbsp of Olive Oil/Oil
  2. Add 1 cup soaked brown rice or white rice. Stir well
  3. Add 2.5 cups of water
  4. Add salt to taste
  5. Add 1 tsp mixed herbs
  6. Add 1 cup chopped cilantro and 2 bay leaves
  7. Add 1 tsp lemon juice. Stir well
  8. Close the lid and Pressure cook brown rice for 30 mins.
  9. Saute Veggies
  10. Add 1 sliced onions
  11. Add 1 sliced Bell peppers
  12. Add 1 tsp mixed herbs
  13. Making Beans
  14. Add 1 cup Boiled beans /pinto beans in a pan
  15. Add 1 tsp mixed herbs
  16. Add 1 tsp of cumin powder
  17. Add Salt to taste
  18. Plating
  19. Take a deep bowl for Plating
  20. Spread the Brown Rice evenly as 1st layer
  21. Spread some beans as a 2nd Layer
  22. Add grilled veggies on one side
  23. Add Chopped Lettuce on other
  24. Add 1 TBSP Sour cream
  25. 1TBSP Guacamole
  26. 1 TBSP Salsa
  27. Finally some shredded cheese

This recipe is inspired by Chipotle.In 2011, I tried this first at Chipotle in USA, and simply loved it, In India also I used to get this in my Pune office with a different version. It still was delicious.
