Malai Kofta (Without Onion Garlic)

True to its name, Malai Kofta is a creamy and scrumptious main course dish recipe which is quite famous in North India. Koftas are made using paneer and potatoes(Any potatoes works good but Gold Potatoes give good results) added with some spices in a creamy gravy made out of tomatoes and onions and dry fruits that provides it its rich taste. It is mainly served with naan or parathas or Rotis but Rice can also  be a alternative.
It can be made in different gravies i.e white or red, White gravy will be cashew and onion based and red gravy will consist of tomatoes,onions ,cashew/almonds and other spices. It can also be made  without onion garlic. That's what today's recipe is about.

Ingredients
    For Koftas
  • 3 Potatoes (boiled)
  • 1 cup Paneer (crumbled)
  • 2 Green Chilies (finely chopped)
  • 1 cup Cilantro (chopped)
  • 1/4 cup Ginger (grated)
  • 3/4 cup Cornflour
  • 1 tbsp Black Pepper Powder
  • 1/2 cup Almonds and Cashews (chopped)
  • For Malai Kofta Curry
  • 1 tsp Oil
  • 1-2 Bay Leaves
  • 4 Cardamons
  • 5-6 Cloves
  • 5-6 Peppercorns
  • 1 Cinnamon Stick
  • 5-6 Cashews
  • 5-6 Almonds (optional)
  • 2 Tomatoes (chopped)
  • 2-3 stick Ginger
  • 2 Green Chilies
  • 2 tsp Red Chilli Powder
  • 1 tsp Turmeric Powder
  • 2 tsp Coriander Powder
  • Salt to taste
  • 2 tbsp Cream or Malai
  • 1 tbsp Kasuri methi
Instructions
    Kofta Preparation
  1. Grate or smash boiled potatoes in a bowl
  2. Add 1 cup Paneer
  3. Add Salt to Taste
  4. Add 2 finely chopped green Chilies
  5. Add 1 cup finely chopped Coriander
  6. Add 1/2 cup grated Ginger
  7. Add 3/4 cup Cornflour
  8. Add 1 tsp Black Pepper Powder
  9. Mix Everything together and make a dough.
  10. Add chopped Dry Fruits and mix everything
  11. Make Round balls or Oblonged Balls
  12. In a Pan, Heat some Oil and fry the Koftas
  13. Turn them once they turn brown on one side.
  14. Remove them from Oil and put on a Tissue to drain excess oil.
  15. Put the Koftas in a Serving Bowl
  16. For Kofta Curry Preparation
  17. In A Pan, Add 1 tsp of Jeera in 1 tablespoon of hot Oil
  18. Add Bay Leaves and few cardamons
  19. Add Cloves, Cinnamon sticks and Black Peppercorns
  20. Add Few Cashews
  21. Add 2 tomatoes cut in pieces
  22. Add few ginger pieces
  23. Add 2 green chillies cut in pieces
  24. Add some water! P.S: i am using whey water made while making paneer as it is healthy!
  25. Add 2 tsp coriander powder
  26. Add 1 tsp turmeric powder
  27. Add 2 tsp red chilli powder and some water
  28. Add few almonds (optional)
  29. Let it cook for 5-10 mins
  30. Then grind it to a smooth Paste
  31. Strain the mixture to a pan to give a smooth consistency
  32. Add Salt to Taste
  33. Add 2 Tsp Cream/Malai
  34. Let it Boil for 5 mins . Garnish it with Kasuri Methi
  35. Pour the Gravy on the Koftas in a Serving Bowl
  36. Pour some cream on Top
  37. Ass some Dry fruits and Kasuri Methi for Garnishing
