Burnt Chilli Garlic Noddles-Burnt Chili Garlic Noodles – A Fiery & Flavorful Delight! 🔥🍜

Chinese is one of most popular cuisine all over the world. Indian version of Chinese i.e Desi-Chinese or Indo Chinese originated around Chinese immigrants settling in Calcutta. It has always been trending as the most popular fast food all these years. Chinese has many vegetarian varieties from Manchurians to Chili Paneer to Fried rice to Noodles and so on. Noodles being the most popular. On this Blog lets try a little spicy variation of Noddle's for the spice lovers. Burnt Chili Garlic variety is yummy version with lots of garlic and chilies. This same recipe can be made with rice or noodles. If you feel you need more spicy or less spicy please adjust the sauces as per your taste. Tips: 1)Noodles should be boiled al dente, as soon as it gets softened in boiling water, switch off the flame 2)Once they are cooked wash under cold water to remove starch and stickiness 3)Seasoned with oil and garlic powder for extra flavor 4)While sauting veggies should be half cooked so crunchiness remains 5)Add some honey or sugar in the sauce to balance the spiciness.

Ingredients
  • 2 Boiled Hakka Noodles (Seasoned with oil and Garlic Powder)
  • 1/4 cup Oil
  • 1/4 cup Garlic (minced)
  • 2-3 Green Chilies (Slit)
  • 4-5 Dried Red Chillies
  • 2 tbsp Chilli Garlic Sauce
  • 2 Carrots (Thinly Sliced)
  • 1 cup Mixed Bell Pepper (Thinly Sliced)
  • 1 Green Onions
  • 1 cup Cabbage (Thinly Sliced)
  • 1 tbsp Chilli Vinegar
  • 1 tbsp Soy Sauce
  • 1 tbsp Red Chilli Sauce
  • 1 tbsp Green Chilli Sauce
  • Salt (to Taste)
Instructions
  1. Boil Hakka noddles al dente (half cooked). Wash them under cold water to remove starch and seasoned them with Garlic powder , salt and oil.
  2. Add 1/4 Cup Oil to a wok. Add below ingredients in the order
  3. Add 1/4 Cup Minced Garlic
  4. 2-3 Green chilies slit once garlic have turned little brown
  5. 4-5 Dried Red Chilies
  6. 2 TBSP Chilli Garlic Sauce. Saute well
  7. 2 Carrots Thinly Sliced
  8. Mixed Bell Peppers thinly sliced
  9. Add Spring onion stems and keep leaves for later
  10. 1 cup thinly sliced cabbage. Saute all Veggies and Dont Overcook
  11. 1 TBSP Chilli Vinegar
  12. 1 TBSP Soy Sauce
  13. 1 TBSP Red Chili Sauce
  14. 1 TBSP Green Chilli Sauce.
  15. Stir Well and Add salt to taste
  16. Add Boiled Noodles. Stir well
  17. Garnish with Green Onions leaves

My memory of Burnt chilli garlic rice comes from 5 Spice a famous Chinese restaurant chain in Mumbai where we used to hog in early work days with friends. Best Veg Burnt Chilly rice I have eaten all my life.
